Chilled Lime Pie

Yes, I have finally begun blogging at the repeated insistence of a few people who mean the world to me (you know who you are ;))


Being my first blog post, I would like this one to begin on a sweet note.  The dessert I present to you'll is light, creamy and has a refreshing hint of lemon in it; just the perfect sweet indulgence to battle the heat!

So, without further ado, let's begin-





 
CHILLED LIME PIE


  •   Servings - 6
  •   Preparation - 20 min
  •   Chilling - 120 min 
  •   Recipe Source - Nestle book                 
 Ingredients
Green Food Colour(Optional)- few drops
             - Fresh Cream
             - Lime Juice 
1/2 tsp                    - Lemon rind
                     - Butter Melted
         - Low Sugar Biscuits
             - Milkmaid(Sweetened Condensed Milk)

Method
  1. Crush the biscuits finely, add the melted butter and mix well. Press this onto a greased shallow glass dish/loose bottom pie dish and chill for 15 minutes in the refrigerator.
  2. Whisk the Nestle Milkmaid and lime juice together until thick. Whip the cream till soft peaks form and fold into the condensed milk mixture, gently mix till combined.
  3. Pour onto the chilled biscuit layer and swirl the green colour through the mixture to get a marbled effect. Freeze for 1-2 hours or until set.
 TIPS:
1. I used Marie biscuits. worked just fine for me.
2. Adding a little green food colour gives a wonderful effect to the lovely dessert.
3. Adding lemon rind enhances the taste.
